Grilled Eggplant Stuffed with Cheese

Here's a quick healthy recipe everyone will surely enjoy. It's always good to eat any food with cheese. You can actually do this with just eggplant and cheese but for those who want to add more, it's fine.


Ingredients:

1 Eggplant
Quickmelt Cheese
Red Bell Pepper
Parmesan Cheese


How to prepare:
Cut the eggplant vertically just enough for you to stuff the cheese;
No need to remove the meat;
Cut the meat inside to have space for the cheese;

Chop the Red bell pepper into bits;
You can grate or cut the cheese into small pieces;
Then stuff the cheese and the pepper inside the eggplant;
The more the cheese, the yummier; 
You can now grill;
Make sure that it's not too close to the heat because the eggplant will burn easily on the outside;
As soon as the cheese melts and the meat is soft;
You can now serve   it and add Parmesan cheese.
